Learning to cook one dish well

Instead of trying many recipes, pick one dish and make it again and again. You will learn more than you expect.

Cookbooks and videos tempt us to try something new every night. A different approach is to choose one dish and cook it repeatedly, until you know it by heart.

It sounds dull. It turns out to be one of the best ways to learn.

Why repetition teaches#

The first time you make a dish, you follow the recipe and hope. The second time, you start to notice things: how the onions look when they are ready, how the sauce smells, why the timing matters. By the fifth or sixth, you are no longer reading. You are cooking.

That feel for the food is what makes a good cook, and you cannot get it from reading.

Choose a good one#

Pick something you like to eat and that is simple enough to repeat often. Good candidates are:

  • An omelette or scrambled eggs.
  • A tomato sauce for pasta.
  • A basic soup.
  • Rice and lentils, or another staple of your home cooking.
  • Roast chicken or roast vegetables.

How to practise#

  1. Follow a trusted recipe the first time, exactly.
  2. Cook it again within a few days, while you remember.
  3. After each attempt, note one thing to change: less salt, more time, hotter pan.
  4. Change one thing at a time, so you know what made the difference.

What you gain#

  • Skills that carry over. Knife work, heat control and seasoning apply to every dish.
  • Confidence. You have something you can make without worry.
  • A signature meal. A dish you can cook for friends or for yourself on a tired evening.

You do not have to give up variety. But try to make it a habit that you can cook one dish properly. Once you can, learning the next one is much easier.
